Tomato sauce with basil

‘They clearly know how to intensify the flavour of pure tomato in Abruzzo – almost exaggerating it, while absorbing the vibrancy of the raw fruit. This medium-red sugo is only made in August, when the crops are almost bursting with overripeness and have developed that natural sweetness that blends with the spices. Red onions, garlic, basil and roasted vegetables are perfectly combined. The flavours of carrot, parsley root and a distinct hint of celery unfold.’
